Ingredients

Batter

1 ½ cup white flour

¾ cup white sugar

½ teaspoon salt

2 teaspoons baking powder

1/3 cup oil

1 egg

1/3 cup buttermilk

1 Tablespoon vanilla

1 ½ cup blueberries

Topping

1/3 cup flour

¼ cup butter softened

1 teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon allspice

Directions

Combine the flour, sugar, salt, and baking powder. Then add in the oil, egg, and buttermilk. Stir gently and just enough to moisten the dry ingredients. Carefully stir in blueberries. Too much stirring will damage the active properties in the baking powder which gives rise to your muffins and creates that perfect shape. Drop the batter into a greased or lined muffin pan. There should be enough batter for 12 muffins but use your judgment. Generally the muffin cup should be filled slightly over halfway. Now preheat your oven to 400 degrees F.  While your oven is preheating, mix together the topping ingredients. Use a fork or pastry cutter to cut the butter into the dry ingredients. Dump the topping mixture over the batter. Then bake in oven for 20 to 25 minutes. Let cool for 5 to 10 minutes, pour yourself a cup of coffee and enjoy!
